The Pinctada Cable Beach Resort and Spa is set to celebrate its fifth anniversary in style later this year starting with its flagship event - Pinctada Cable Beach Polo on May 24-25.

And the signs are already looking good for the high-season spectacle launch - with a few new changes on the cards.

This year, a yet-to-be announced celebrity chef will head cuisine for the highly anticipated Dinner Under The Stars on Cable Beach on Saturday, May 24.

There will also be changes to menus, wine lists, staffing and a few "special events" for hotel guests only, aimed at adding to the ambience and flavour of the weekend beach series.

With the polo still three months away, rooms have been selling like hotcakes and only a handful are left for sale.

The polo will once again feature world-class, national and State players taking part in a number of matches that will culminate with an international game.

Hotel general manager Matthew Clowes said a recruitment campaign has been launched to ensure the planned changes become a reality with guests as the main focus.

"This is the time of the year we are strategising for the whole season, from polo and beyond," he said. "Polo starts the season but we are now looking at recruitment, new menus and wine lists.

"With the new jobs there will also be training.

"We have not finalised everything yet but this will be polo central and there will be some special events purely for our house guests.

"We can't release details of our special menu yet but we are expecting a celebrity chef to help us out with Dinner Under the Stars."

Mr Clowes said Pinctada Cable Beach Polo provided the perfect start to the season.

"As an actual event run by a hotel, this is our flagship event," he said. "The event generates interest nationally and internationally, and really puts the Pinctada Hotel and Broome on the map for sports tourism.

"Last year we were fully booked during the polo season."

He said things were looking positive at this stage of the year, and additional major events like the Pearl Coast Racing season from May to August would add to the excitement and attract visitors to the town.

"By the time we get to April, we have got Easter and beyond that we are ready to hit the ground running with polo and the Broome horse racing season, so it will definitely be an exciting time," Mr Clowes said.

"It will be a fantastic season and 2014 is going to be a fantastic time, not just here in Broome but also at our sister hotel the Kimberley Grande in Kununurra and the region as a whole."

Pinctada Cable Beach Polo is free to watch picnic-style from the sand, but there is also an option to purchase tickets to the VIP marquee and mingle in barefoot elegance with the players and new friends from around the globe.
