Terrigno family from Manjimup named best sausage makers at WA Italian Club’s competition
A Manjimup family has been crowned the best homemade Italian sausage makers with the Terrigno family winning big at a Perth salami competition.
Nick Terrigno said the decision to submit their sausage into the WA Italian Club’s homemade sausage competition in Perth was a “last minute” move with the competition lining up with another trip to the city.
He said the top Perth butches were the judges, taking into account a range of different factors.
“They do all the taste testing and judging based on colour, texture, flavour and break it down into certain categories,” Mr Terrigno said.
“It’s a recipe we had for years, and slowly tweaked over the years from our grandparents to doing it ourselves.
“It’s a tradition everyone has done, and we like to keep the tradition going as a family. We tweaked things to our liking and have that good flavour we and other people like.
“Obviously, we were ecstatic (to be named the winners) as we were against stiff competition, going into an Italian club with a lot of good quality sausages and salami.”
“We definitely had no expectations, but it’s a good feeling to have the product we make liked by everyone else.”
